High Protein Funfetti Cake 🌈💪
This tastes just like a classic funfetti cake, but it’s packed with protein and perfect for meal prep!

Makes 2 servings
Ingredients
Cake
* 35g oat flour
* 50g nonfat Greek yogurt
* 25g vanilla whey protein powder
* 70ml unsweetened almond milk
* 1 egg
* ½ tsp baking powder
* 1 tsp honey
Frosting
* 100g nonfat Greek yogurt
* 1 tbsp monk fruit sweetener
* 1 tsp vanilla extract
Topping
* 20g sprinkles
Instructions
1. Preheat your oven to 350°F (180°C).
2. Add all of the cake ingredients to a bowl or baking dish and whisk until the batter is completely smooth.
3. Pour into a 370ml baking dish (or divide between smaller ramekins).
4. Bake for about 25 minutes, or until a toothpick comes out clean.
5. While the cake bakes, mix together the frosting ingredients until smooth and creamy.
6. Let the cake cool completely before spreading the frosting on top.
7. Finish with the sprinkles, then enjoy
